A beautiful pub/restaurant set in the idyllic setting of Royal Deeside is looking for a Chef de Partie to strengthen their team. Having gained a superb reputation for quality, well presented and brilliantly executed food, they are looking to cement their team in order to progress in 2015 and beyond. A beautiful setting with a superb Head and Sous who will train and develop continually.
As Chef de Partie, your main duties will include running your own section with responsibility for all mis-en-place, wastage and execution and also managing the kitchen in the absence of the Head and Sous. You will be encouraged to create your own dishes and bring ideas to the table. You will also be responsible for the consolidation and maintenance of all HACCP documentation and ensuring compliance throughout the whole kitchen.
You will be required to ensure you are suitably prepared for busy meal periods with covers ranging from up to 50pax at lunch up to 150pax at night. With the full menu prepared from scratch, you will need to be a good time manager with good technical skills.
The job comes with a shared accommodation close by and a fantastic bonus paid annually based on your set targets within the kitchen.
Your CV should contain good longevity within your previous jobs and you will have trained at a high level. This could be in a gastro pub environment, bistro restaurant or corporate 4* hotel. Candidates applying MUST have worked at at least Demi Chef de Partie level.
Your technical skills will be evident and you should be passionate about creating new dishes, especially with the fantastic Scottish larder at your disposal.
